介紹:鮑魚是四大海味「鮑參翅肚」之首為了保持肉質鮮味,捕撈後立即以-40度以下低溫急速冷凍;活體冰凍肉質呈淡黃色,較市面上死後冰凍肉質呈白色的相比,更加Q彈鮮美多汁。為了減少空氣接觸、保持水分,採單體包冰處理,除非馬上食用,應避免重複解凍,造成鮮味流失的情況喔。

建議食用方法:烹製時,先取出要吃的量解凍,裡面會有一些綠色的內臟,要去除乾淨,然後拿軟刷把鮑魚肉表面刷洗乾淨,特別是縫隙處一定要多刷幾遍。再依需求加入調味、蛋白、生粉、紹興酒等醃製,或快炒、白灼、煨製等方式處理,都十分美味!
