介紹:龍珠是台灣近年流行吃的海鮮食材之一,為魷魚或章魚的嘴巴,因其嘴型如珠圓,故稱龍珠,每隻魚僅有一個嘴巴,故十分珍貴。
嚴選魷魚經捕撈上岸後,立即分解取出嘴部,再以低溫冷凍鎖住鮮度,蛋白質含量達16%~20%,脂肪含量少,營養價值十分豐富。
觀光漁港及鄉鎮市區專賣油炸海鮮的攤位及小吃店都會有炸龍珠這道菜。

*貼心提醒*
退冰會有些許的魷魚腥味(屬正常現象),只要稍微過水洗過,炸完即是超美味的海味佳餚!

建議食用方式:先將龍珠洗淨瀝乾,加入少許胡椒鹽、米酒醃漬;再將油溫熱至180度,龍珠裹粉後丟入油鍋中,用中小火預炸至乳黃色後,將龍珠撈起後,開大火再將龍珠放入油鍋,可將多餘的油逼出,且炸完會呈現漂亮的金黃色喔!
