虱目魚肚不僅是傳統家常料理,也是台式便當常見的海鮮食材選擇。軟嫩細膩的魚肚與鮮甜紮實的魚肉,搭配煎得香酥的魚皮,呈現出虱目魚肚的多重美味。

建議食用方法:以小火先將魚皮煎至呈金黃色,且魚肉微透出半熟白色,此時為最佳翻面時間;若想要吃『赤赤』則翻面繼續煎至全熟,起鍋前再翻面重複煎魚皮面;若想保持魚肚濕潤感,翻面微煎魚肚後隨即再翻面,蓋上鍋蓋用熱氣將魚肚燜熟也可以。
煎虱目魚肚不需太多調味,一點點的鹽和胡椒粉提味即可,才能嚐到新鮮魚肉原有的鮮甜細緻,以及豐富的魚肚油脂帶出的入口即化口感。
